Teisel kursusel osales Simona Saaliste koos oma kursusekaaslastega Taanis Roskilde kutsekoolis praktikal. M\u00f6\u00f6dunud suvel, peale pagar-kondiitri eriala l\u00f5petamist otsustas Simona ennast proovile panna iseseisval ja pikemaajalisel Erasmus+ praktikal. Kindlat praktikakoha soovi Simonal ei olnud, kuid eesm\u00e4rk oli \u00f5ppida oma ala parimatelt meistritelt Belgias v\u00f5i Prantsusmaal. Teko v\u00e4lispraktikate koordinaator Astrid soovitas Simonal kandideerida Belgias Master Talent organisatsiooni poolt pakutavatele praktikakohtadele Michelini t\u00e4rnidega kokkade k\u00e4e alla. Meie koolist polnud veel keegi selle organisatsiooni kaudu praktikal k\u00e4inud. Suve alguses p\u00e4rast l\u00f5petamist saatis Simona oma sooviavalduse Master Talent&#8217;ile ja 2019. aasta septembri l\u00f5pust ootas teda ees praktika Beglias Gentis Pastry poe omaniku ja peakoka Joost Arijs&#8217;e k\u00e4e all. Talle kuulub mitu tunnustust, Gault &amp; Millau valis 2013 aastal Joosti parimaks Belgia <em>pastry-<\/em>kokaks ning 2020 parimaks \u0161okolaadivalmistajaks.<\/p>\n<p>Simona muljed praktikast:<\/p>\n<blockquote><p>Minu \u00fclesandeks oli iga hommik teha <em>mille feuille<\/em>\u2019sid, t\u00e4ita ekleere, t\u00e4ita <em>madeleine<\/em>&#8217;de matte tainaga jms. Pood avati kell 9 ja selleks ajaks pidi k\u00f5ik valmis olema. Kui vitriinid olid kenasti t\u00e4is, alustasime ettevalmistustega teiste asjade jaoks, mida oli selleks p\u00e4evaks vaja teha: biskviitide, kookide sisu, <em>mousse&#8217;<\/em>de jms valmistamisega. Sortiment on k\u00fcllaltki rikkalik nii magustoitude hulgas kui kommide osas. K\u00f5ik kasutatavad toorained on parima kvaliteediga. Praktikakohana on Joost Arijs oli kindlasti k\u00f5ige parem praktika, mis mul olnud on. Kollektiiv on seal v\u00e4ga s\u00f5bralik, tore ja v\u00e4ga abivalmis, iga p\u00e4ev sai rohkesti naerda. Koha omanik t\u00f6\u00f6tab ise ka seal ja see on v\u00e4ga tore. Teadmisi ja praktilisi oskusi saab seal ikka v\u00e4ga palju &#8211; on, mida \u00f5ppida. Kuna tulemas olid aga j\u00f5ulud ja aastavahetus, olid abik\u00e4ed n\u00f5utud ja Simona j\u00e4i Genti veel paariks n\u00e4dalaks.<\/p>\n<blockquote><p>Ettevalmistustega j\u00f5uludeks alustati juba novembris. J\u00f5uludeks valmistavad nad spetsiaalseid kooke, mille nimeks on <strong><a href=\"https:\/\/www.allrecipes.com\/recipe\/17345\/buche-de-noel\/\"><em>buche<\/em><\/a><\/strong>. Meil oli umbes 6 v\u00f5i 7 erinevat sorti. T\u00f6\u00f6p\u00e4evad olid pikad, kuid t\u00e4nu toredale kollektiivile ei olnud see sugugi raske. Praktikaga j\u00e4in v\u00e4ga rahule ja lahkusin sealt parimate m\u00e4lestustega ja teadmistega.\u00a0 Oleksin hea meelega j\u00e4\u00e4nud veel kolmeks kuuks.<\/p><\/blockquote>\n<p>Simona t\u00f5i kingituseks kaasa \u00fche Joosti klassikalise pralineekarbi.
